The elaborate and extended ageing process makes this Sherry Vinegar a Gran Reserva – the height of excellency. It is the result of the dedicated work of four generations of my family to the production of unique wines. These wines, from our ancestral vineyards, nature by natural acetic process. Stored in half – barrels of American oak for decades and topped up only with superior – quality Sherry Wines. Our Gran Reserva Sherry Vinegar has a delicate bouquet of wood and cloves and an intense nutty flavor

El vinagre de Jerez PX, se elabora a partir de la variedad de uva dulce Pedro Ximenez y es envejecido siguiendo el tradicional sistema de “So-leras y Criaderas”. La uva PX que es expuesta al sol para su pasifica-ción, dulcifica el bouquet de este preciado Vinagre de Jerez. Se muestra extraordinariamente aromático y suave. Es perfecto para reavivar el sabor de cualquier plato, incluidos postres, y especialmente carnes de caza, pato y ternera.

PX Sherry Vinegar is produced from the sweet Pedro Ximenez grape variety. It is aged in oak barrels following the traditional system of “Soleras y Criaderas”. The PX grape is left in the sun to dry giving a sweet aroma to this special Sherry Vinegar. It is extraordinarily aromatic and smooth. It perfectly enhances the taste of every dish, including desserts, and especially for game, duck and red meats.

Vinagre agridulce y con cuerpo, agradable al paladar y cuyo aroma nos recuerda al de las viejas bodegas jerezanas. Posee un intenso color a caoba, siendo suave a la nariz con regusto a Palo Cortado. Este vinagre es fruto de una mimada elaboración y un envejecimiento durante años en botas de roble. Las técnicas empleadas para su fermentación acéti-ca siguen procesos mozárabes, ya usados tradicionalmente en Al-Andalus y rescatados de antiguos tratados del siglo XIV

It is a full bodied bittersweet vinegar. It has a pleasant flavor and a mild aroma which is reminiscent of the old sherry bodegas. This vinegar has a rich dark colour which is carefully created and aged in oak barrels for several years. The techniques used for the fermentation of this vinegar follow ancient traditions from the fourteenth century of thee “Mozarabic” in the provinces of Andalucia.

The organic vinegar EL MAJUELO is made from grapes certified as organic by the Andalusian Organic Agricultural Committee, CCAE. The hygienic and sanitary conditions during the whole process, including the double alcoholic and acetic fermentation, as well as its aging in American oak barrels for more than two years, comply with the strict regulations accessory for organic products.
