The Peruvian capital is worthy of a lengthy stop because all the ways of understanding life that coexist in the country are concentrated there.

7Introducción Introduction

Nevertheless, all the cultures that make up this country of contrasts converge–or crash–in Lima. The capital houses millions of Andean immigrants and a Chine-se quarter; thousand-year-old places of worship and the most impressive Spanish colonial architecture in South America; cafes buried in cliffs facing the sea and Creole-Japanese fusion restaurants… In a nutshell, a universe in which the past and the present shape a cul-tural and human landscape of unprecedented diversity. The five destinations that I propose below, trace the sources of that landscape. The complex puzzle that they piece together is made with materials that are scattered throughout the country. Leaving Lima and continuing the journey throughout the Peruvian terri-tory, is dealing with the pieces separately, like someo-ne enjoying the ingredients of an unexpectedly exotic and, without a doubt, spicy dish.Echoes of Africa. During the colonial period, most of the workers were Indian. Few black slaves were nee-ded and those who arrived did not belong to the same ethnic group. People from Congo and Mandingo peo-ple, people from Mozambique and Carabaelie people, people from Angola and Yoruba people ended up in the Peruvian coast without sharing neither language nor culture. Under such conditions, they had to invent a common language with what they had, as primitive as that was. Until today, the main black percussion instruments are a box drum and a donkey’s jaw bone.
The descendants of the slaves that grew cotton in the haciendas (estates) in the southern coast still live in the small village of Chincha, south of Lima. The blacks were so few that they were easy to keep an eye on. The parties in their huts had to be discreet so as not draw the attention of their owners. For that reason, Afro-Peruvian music is less noisy than Cuban or Brazi-lian music. Many of their dances are done with hands and feet close together, as if they still had the shackles on. But less noisy does not mean less flirtatious. In one of the most popular afro dances, the man tries to light
Chaotic, extreme, intense and voluptuous, Lima is the gateway to Peru, especially for those arriving by air. But the traveler’s interest in it seems to end there. The tour operators do not usually give too much atten-tion to the capital or to anything from the country under five hundred years. In the European travel agencies, Machu Picchu monopolizes the appropriate box devo-ted to Peru. And those looking for more prefer to explo-rer the exotic Amazon jungle. Lima is simply a barrier, an uncomfortable procedure prior to true discovery.
9Introducción Introduction
a candle hanging from the girl’s behind. But he does it quietly, stealthily, to not wake up the master.
Catholicism. On November 13, 1655, an earthquake devastated the city. Most of the houses collapsed. But in the neighborhood of Pachacamilla, a fragile adobe wall remained intact amidst the rubble, without even a crack. On the surface of the wall there was an image of Christ crucified, a crude and imperfect portrait pain-ted by a black slave. The population attributed divine powers to the image and called him Lord of the Mira-cles. Spontaneously, a popular worship that the autho-rities did not approve was started. Each time that the viceroy hired a worker to erase the image on the wall, something happened. Up to three workers abandoned the site, gripped by mysterious panic attacks.
Today, the wall is carried out every October, in a pro-cession of devotees dressed in purple, the official color of the Lord of the Miracles. The football team Alianza Lima uses that color for the blue stripes of their jer-sey. Throughout the month, the traditional turrones de Doña Pepa (a type of nougat candy) are sold and the bullfighting season takes place. And, above all, there is the possibility of asking for a small miracle. Gossiping architecture. The old part of Lima is popu-lated with beautiful balconies that are almost as big as a room. Its complex Moorish motifs, with arabesque lace, are not matched in any other colonial city. Histori-cally, the purpose of that unique design was to optimize the display of hypocrisy.
During the 16th and 17th centuries, the old ladies of society spent the whole day in those balconies, nosing around other people’s lives. The enclosed galleries allowed them to look without being detected. From their elegant watchtowers they would watch the people that attended mass at the cathedral; talked about the clothes of the nobles that would walk by the plaza Mayor (Main plaza); noticed who would go in and
out of the government buildings and who they were ac-companied by. The galleries could also be slightly ope-ned if the lady was alone and needed to let the current lover know. Today, people have changed little, but the balconies have become more expensive.
Culinary culture of disaster. Lima is one of the best places in the world to eat. As Peruvians we focus our entire ego in food. Politics is always a disaster and we have not played in the Soccer World Cup in 25 years. We need a place to show off all that repressed national pedantry; that place is the table.Paradoxically, Peruvian cuisine is a product of national disgraces; to begin with, poverty. During the colonial period, the Indians were forced to improvise something to eat with their masters’ leftovers. That produced a very sophisticated culinary art: not a single dish of Pe-ruvian cuisine includes a meat fillet. In fact, the essen-ce of the dish is usually the sauce –which can include shredded chicken, hot spices, cheese and nuts – ser-ved over boiled potatoes. At the end of the 19th century, Peru declared the abo-lition of slavery. The rich landowners from the coast accepted to liberate the blacks with one condition: ens-lave the Chinese. Thousands of coolies landed to work in the haciendas in the south. Later came the Italians that were fleeing from Benito Mussolini and the Japa-nese that were escaping from the post war. The result of all this can be found in the menu of any restaurant: mondonguito a la italiana, cebiche —a sort of sashimi with sweet potato and hot spices—, lomo saltado —stir fried beef fajitas and vegetables with soy sauce—…Today, instead of immigrants, the country hosts gas-tronomic tourists: Chileans and Colombians arrive on a Friday night, eat all they can and go back to their country on Sunday.
Neon nights. Tourists tend to exile themselves in Mi-raflores and Barranco. The tour operators advise them to stay within those neighborhoods and threaten them
with the worst calamities. But the “hottest” neighbor-hood in town is Comas, and it is not included in the scope of any of the agencies. Fifty years ago, Comas was a bare hill. Today, the neighborhood is easily recognized by the flambo-yant pollerías (rotisserie restaurants) with neon lights and by Calle 8, a three story-discotheque. On “gay Monday’s”, Calle 8 celebrates its gay night, which in reality is a pluri-sexual night. The hosts are copper skinned drag queens that move among the teenagers hunting for their first kiss and executives (in couples) out partying. Túpac Amaru Avenue, where the dis-cotheque is located, was named after the rebellious Incan chief dismembered by the Spanish in the 18th century. Some of the drag queens are dressed like him, but with light suits.
The other great disco is called Kapital, and on Satur-days it gathers 3000 people. Each corner has stages with groups of dancers practicing a sort of break dance that recycles dance moves from every style, ranging from Michael Jackson to cumbia. The dancers are an allegory of what the neighborhood represents. In a society with a deep rift between the social classes, Comas is the only place where no one cares what color you are, how much you earn or who you sleep with. Comas is a neighborhood of Andean immigration. Tho-se who have lived here for half a century are the mo-dern face of the old owners of the Sacred Valley. The fusion of cultures is present in every corner of Peru. In Cusco, the Creole architecture and the catholic sym-bols fuse together with the Incan stone walls. And the skin of almost every Peruvian reflects the mixture of races and cultures which forges what the writer Jose María Arguedas called the country of “all races”. But Lima is the place where they are all jumbled together almost one on top of the other. It is only after dancing here and traveling through the history of the city with the eyes and palate that we are ready to discover this kaleidoscopic country.

There are many ways to look at the world and one of them is through the gaze. Such that, by using a lens, it’s able to observe and capture “that something” a simple mortal eye would overlook.
This time, we’ll get to do so in Lima Photo 2013. It is an International Fair of Art Galleries specializing in Photography that will be carried out for the fourth consecutive year in the Centro de la Imagen, Miraflo-res, from 7th to the 11th August 2013.Ten countries and more than 20 art galleries, between national and foreign, will exhibit their work: Argentina, Bolivia, Canada, Colombia, Cuba, Spain, Mexico, Uruguay, the United States, and, of course, Peru. One of the prominent proposals that will provide the fair is a sample of the Peruvian artist Eduardo Hirose, in the Inmobiliari stand. In addition, for the third time will be presented the award for photography “Repsol-Lima Photo” composed of 12 major artists, and the 1st and 2nd place that will become part of the Repsol Collection of Contemporary Photography.
Definitely we are talking about the photo exhibit more important in Peru. An opportunity to take a look at the best of contemporary photographic production and, why not, to buy a magnificent image captured through a different gaze.

rial me hable. No me impon-go, espero, es-pero mucho.”

Between the architecture and the art there is a complementarity similar to the wine-pairing sommeliers speak about when they say that for each wine there is a proper meal and, in combination, both are improved. Something similar is happening in rela-tion to the architectural spaces and art pieces. In contrast to the standardized industrial products that often serve to furnish and deco-rate in a uniform manner (in the manner of those wines called house wines that offer some restaurants), the artistic and handicraft objects (such as quality wines) produce a distinct flavor in the environment. And that is because, unlike articles produced en masse, the object made by hand or touched directly by the author radiates its aura into the exhibition ground where is installed.
She studied art, specializing in painting, at the Catholic University of Peru where she assimilated creatively the abstractionism of its founder, Adolf Winternitz, a stained-glass artist and painter. Arribas has received a number of prizes and awards, has shown her work extensively in United States and Europe and her work is in museums and in private collections. Today she is a consolidated artist and the painting is the backbone of his vast and plural work that builds bridges between arts and crafts. But she goes further when venturing into the field of the installations, sculptures, interven-
tions and assembly. After the training the unlearning process began, the return to her origins, essential source of identity and creation: Piura. Country, city, industry, farm, beach, the leisurely pace of province, freedom… The remains turned into values, now she hunts, collects, dismantles and assembles them until they became relics, charms and fetishes. She engraves them giving birth to a new language; as a consequence a special place takes form: Taller Huaringas or the Witches Workshop. Huaringa is a word that embraces a huge and ancient bond between shamanism and art, so this place would be as a factory, with all those ready maded mixing both, concept and good taste.About her poetics, that is to say her way of creating, Maricruz Arribas commented once for a Chinese magazine:“I only follow my instinct, let the talk to me. I don’t force it or impose myself. I wait, wait a lot.”It seems to paraphrase the craftsman of the Chuang Tze story when he made it clear to the mandarin after he praised him for the recent delivered piece of work, that has not been a creation of the gods, as implied, but only the fruit of the emptiness, the silence and the observation.

We’re 8 millions and 432 thousands citizens. Do we look at each other? Do we really know who we are? With these questions in mind a photographic project has taken shape, aiming to discover and display our cultural diversities.
Mírame, Lima is a series of 50 family portraits aiming to reflect the cultural, ethnical, religious diversities present within the Peruvian capital. Partly as a result of insecurity, street violence, lack of information, among other things, people in Lima tend to live very isolated from each other, in small groups from which they rarely emerge. With this project we would like to help to get to know each other better, to encourage integration and respect between citizens and to do so with a positive, optimistic tone in order to avoid conflict and controversy. We believe in the necessity to open a dialogue and to awake curiosity within people about each other’s diversity. The project is an invitation to explore without prejudice and stroll ourselves through a plural city, whose houses and streets are a mirror of the entire world.
The families portrayed are anonymous. They could be distant relatives, our childhood’s neighbours, the chinese restaurant’s owner, the local tailor or the fashion designer. Anyone of us could be included. All of these families opened their house to get us to know them. They picked their favourite objects and, as if in a theatre play, they performed their own lives: who they are, what do they dream and in what they believe. In many cases families extended, embracing new members: working partners, friends or pupils.Mírame, Lima is a collaborative project between photographers Jaime Travezan and Morgana Vargas Llosa with art director David Tortora.

JAIME PESAQUEEn constante evolución - In constant evolution

Let us be sensible and ask ourselves what would become of the peruvian cui-sine without these chefs that guided by a true passion studied, investigated,
and learned from other cuisine? Would still be rich but not evolved. And it is the evolution as a concept, as a form of work, as a principle, which rules in the kitchen of Jaime Pesaque, one of the most outstanding represen-
tatives of our gastronomy.
Mayta, modern expression of the peruvian cuisine
“We are in constant change becau-se my kitchen is a reflection of what I am and also because it is important to be updated with what is happening in the world. For this reason, Mayta is kitchen in evolution, a contemporary Peruvian cuisine. My tools are local products and memory. Inputs and re-cipes that I try to express differently, improved, adapted, reinvented with technology or new techniques.”
Passion for rice “My passion for rice was born in Italy, discovering how is treated in a very different manner and variety -here is only used a variety of rice, the textu-red-. It has been an emblem of the restaurant. Before changing the Menu, had nine types of rice from different parts of the world.”
Pisco Bar “We wanted a bar only expressed through pisco. One day, we prepared a marinated of Kion, then another of cinnamon, and with them we prepare chilcanos. Few months later, we had many macerated and also the concept of the bar. Now we have 98 macera-dos and we have come to have such as 125, but that depends on the sea-son. We would not go against nature.”
Homeland stamp in the outside world Raymi in New York, SuViche in Miami, Nuna in Punta del Este and Mayta in Hong Kong: “To maintain the quali-ty and essence of our food, in all of my restaurants the workforce is from Peru. My pillars in each area are Peru-vians and are people teached by me.”
The Peruvian ingredient for excellence “With Amarillo chili you can do Peru-vian cuisine wherever you want.”

AMORAMARCocina peruana - Peruvian cuisine
