Sobre la calle 27 de Abril y a la sombra de la sólida Catedral deNuestra Señora de la Asunción atraen la mirada del atento transeúnte unasucesión de arcos de medio punto que forman una inconclusa recova dealtos techos de bovedilla y tirantería de madera.

Si bien la intervenciónnose remonta a una antigua data, tiene suencanto.Se originó en el año 1986, por una propuesta de la Municipalidad deCórdoba siendo Intendente el Dr. Ramón Bautista Mestre para darle unaunidad estilística al conjunto que se había tornado caótico por sucesivasintervenciones comerciales que databan de mediados del siglo XX.

En el reordenamiento de la fachada se usó como patrón constructivo elarco de medio punto que existía en algunos tramos y se repitiórítmicamente hasta completar la cuadra.

Atrás quedó el recuerdo de la Botica existente en la esquina de las callesIndependencia y27deAbril, devenido luegoenbar,o la tintorería Palermo,cuyos dueños firmaron un contrato de alquiler por 50 años que seprolongó hasta el año 2000, año en que se retiraron del lugar...indicándonos una relación comercial de otra época.

Pero no toda la construcción es de reciente data. Si observamos conatención,descubriremosgruesosmurosdecalicanto, interesantesbóvedasy techos de tijera que se edificaron en el “solar” de don Juan de Tejeda yque por su decisión se transformó en el Monasterio de las Carmelitas deSanta Teresa de Jesús, en 1628...

Entonces no resulta antojadizo que un local gastronómico ubicado allí, sedenomine El Solar de Tejeda ofrezca una cálida atención familiar,mientras la vista del comensal descubre estos interesantes testimonios deantigua data...

On 27 de Abril street and in the shadow of the solid Cathedral ofNuestra Señora de la Asuncion a range of round arches that form aninconclusive arcade of high roofs of dome and woods attract the look -of theconcentrated pedestrian-.Even though the intervention is not old, since it originated in 1986 due to aproposal of the Townhall of Cordoba in the time Dr. Ramon Bautista Mestre wasMajor -to provide the set a stylistic unity which had turned chaotic due tosuccessive commercial interventions from the middle of the XX century- it has itscharm.In the reordering of the facade the round arch was used as constructive pattern.It existed in some parts and it was repeated rhythmically until the block wascompleted.

Behind remains the memory of the existing Botica in the corner ofIndependencia and 27 de Abril streets -later a bar- or the Palermo dry cleaner’s,whose owners signed a lease contract for 50 years that lasted until the year

2000, year in which they left the place... showing us a commercial relation ofanother time.But not all the construction is recent. If we pay attention, we will discover thickStone walls, interesting domes and roofs interesantes that were built in the“solar” of don Juan de Tejeda and through his decision it became the Carmelitas

de Santa Teresa de Jesus Monastery, in 1628...Therefore it is no caprice that a gastronomic place located in that place is calledSolar de Tejeda and offers a warm familiar service, while the diner guest looks anddiscovers these old testimonies from along time ago...

Si bien visitar la manzana jesuítica forma parte de “los imperdibles” dela ciudad de Córdoba, le aconsejamos prestar atención también al entorno ycalles que la circundan. Ellas hablan del pasado y guardan en sus veredas ymuros testimonios de muchos siglos.Tal es el caso de la calle Caseros que, desde Independencia hasta VélezSarsfield, fue testigo tanto del paso de los primeros alumnos del ColegioMáximo, como de aquellos universitarios que protagonizaron la reforma de1918.A fines del siglo XIX se abrió paso el “Tranvía Argentino”, un tranvía a caballoque venia por la actual San Jerónimo y luego de tomar Entre Ríos-Caserosdoblaba en la esquina de La Iglesia de la Compañía de Jesús con rumbo norte.Por otro lado, las Hermanas del Convento de las Carmelitas Descalzas de SanJosé fueron adquiriendo de a poco las casitas ubicadas en la vereda norte

para rentarlas. A medida que pasaron los años entraron en un francodeterioro, detenido recién en el año 2000 gracias a un importante

proyecto que logró recuperar y unificar arquitectónicamente la cuadra.Así nacióunnuevoespacioabiertodecomprasel “PaseodeComprasCaseros”.Priorizando la conservación, se procedió a la peatonalización delsector y luego se trabajó en la puesta en valor del tramo. En esa

instancia se descubrió, bajo tierra, testimonios de la primera instalación deaguas corrientes de la ciudad (fines del siglo XVIII). El innovador sistemapartía desde un estanque ubicado en el actual Paseo Sobremonte: elagua corría entubada hacia el centro por una acequia de piso yparedes laterales de ladrillos con tapa de laja; cada 80 metrosse construían cajas de inspección y decantación (dos adiferente altura) para verificar cómo fluía el líquido.Lo cierto es que hoy esas valiosas perlas del pa-sado forman parte de la prolija decoraciónde un negocio de indumentaria con-ceptualizada con el Polo; se tratade “La Martina” que lasmuestra en su salón deventas, através degruesos cristalesiluminados.

Even though visiting the Jesuit Block forms part of those places that “you cannotmiss” of the city of Cordoba, we also recommend to pay attention to the surroundingsand the surrounding streets. They talk about the past and keep in their sidewalks andwalls testimonies from many centuries ago.Such is the case of Caseros street which, from Independencia street until VelezSarsfield Ave. became witness not only of the first steps of the students from ColegioMaximo School, as well as those of the university students who had a leading rolein the reformation of 1918.At the end of the XIX century the “Argentinian Tram” had its place, a horse tramthat came along San Jeronimo street and after going along Entre Rios-Caserosstreets turned on the corner of Compañia de Jesus Church northwards.On the other hand, the Sisters of the Carmelitas Descalzas de San Jose Conventwere acquiring little by little the small houses located in the north sidewalk tolease them. As the years went by, they became deteriorated until they couldbe recovered in the year 2000 thanks to an important project that couldrecover and unify the block architecturally. Thus a new open space to makepurchases was inaugurated, the “Paseo de Compras Caseros”.Giving priority to the conservation, the area was transformed into a pedestrian area andthen the section was put into value.In that instance it was discovered, underground,testimonies of the first installation of running water of the city (end of the XVIII century).The innovating system had its origin in a pond located in the present Paseo Sobremonte,the water ran through pipes towards the centre along a ditch whose walls and floorwere made of bricks with a slab lid; every 80 metres inspection and decantation boxeswere built (two at different levels) to verify how the fluid was flowing.The truth is that at present those valuable pearls of the past form part of the neatdecoration of a clothes shop associated with Polo, “La Martina” that shows themthrough thick illuminated glass windows.

La obra otorga continuidad visual, peatonal, estética yarquitectónica a la rambla que se ejecutó entre las plazas Vélez Sarsfield yEspaña, convirtiendo a la zona en un recorrido atractivo.Y si a ésta altura gastó demasiada energía en la caminata, buscar un puestode Choripan, es una sugerencia que le cargará las pilas.

First El Paseo del Bicentenario, an elevated space covered with colourful rings,201 in total that talk about the milestones of the Argentinian history from 1810,

each ring has an year inscripted and ring Nª 201 symbolises the future.

This creative project that was carried out jointly by the Townhall of Cordoba, theGovernment of the Province and La Voz del Interior newspaper; it is a collective work becausethe local people were invited to think about their identities and thus look for those

milestones from Cordoba in those two centuries.

Almost immediately El Paseo de la Rambla, that leads directly to Ciudad de lasArtes, leaves the sports premises that belong to the National University of

Cordoba and the Cordoba Lawn Tennis. It is about a big sidewalk built with thesame material that was used in Hipolito Irigoyen Ave, installation of trellis,

benches, and other urban equipment. The work provides visual, pedestrian, aesthetic and architecturalcontinuity to the avenue that was executed between Velez Sarsfield and España Squares, making ofthis area an attractive walk.

Existen en Casa de Pepino dos personajesentrañables, inmortales de la revista de humorcordobés “La Hortensia”, capaces de asustar yhacer reír al mismo tiempo a todo aquel quelos ve por primera vez. Todos los días, cuandoalgún curioso ingresa por primera vez alCentro Cultural en busca de deleitarse conarte y cultura de todo tipo se pega un buensusto al entrar a la sala del sótano yencontrarse con 2 hombres, tiesos,mirándolo. La primera reacción es “¡Ah!”, y despuésllega la carcajada de quien haya sido asustado y susacompañantes al darse cuenta que se trata de dos muñecos de tamaño realque representan los legendarios Negrazón y Chaveta, aquellos dos personajesprincipales de la revista Hortensia alrededor de los cuales se fundaron historiasy costumbres de nuestra Córdoba en los años ’70 y principios de los ’80.

Luego de las risas llegan las fotos. Los visitantes se abrazan a los muñecos conuna sonrisa imposible de ocultar para inmortalizar el momento.

1 de cada 5 páginas del libro de visitas de Casa de Pepino contiene algúncomentario del Negrazón y del Chaveta, que con el paso de los años hanllegado a formar parte del personal del Centro Cultural.

There are two immortal characters endearing of the local humour magazine “LaHortensia” in Casa de Pepino, capable of scaring and making laugh at the same time all thosewho see them for the first time. Every day, when some curious person enters the Cultural Centerfor the first time searching for the pleasure of all kinds of art and culture gets a fright whenentering the basement and finding two stiff men staring at him/her. The first reaction is “¡Ah!”and then a guffaw is released when they realise that there are two real-size dummies whichrepresent the legendary Negrazon and Chaveta, those two leading characters of Hortensiamagazine around which stories and customs of our Cordoba had their origin. This was in the1970s and beginnings of 1980s.

After the laughs you can see the photos. The visitors hug the dummies with a smile impossibleto hide to immortalize the moment.

1 out of 5 pages of the visits book to Casa de Pepino has some comments of the Negrazón andChaveta, which with the passing of the years have become part of the personnel of the CulturalCenter.

En la reciente temporada Villa María confirmó su posiciónprivilegiada en la provincia como punto de referencia delturismo nacional e internacional. Aquí se dedicaronespecialmente a la plantación de frutales y en 1740 construyeron la casa-habitación y una gran bodega.Desde allí y a solo 5 minutos, la Estancia de Caroya (2) que se formó en1616 con el objeto de que sus frutos mantuvieran las posesiones de la ciudadde Córdoba. Fue casa de descanso para el alumnado, de ahí su concepciónfuncional y arquitectónica en torno a un patio rectangular, galerías que seabren a las habitaciones, una de las cuales era la capilla.Luego por la ruta a Ascochinga (8 km.) deberá doblar a la derecha, transitar12Km.de tierraparaencontrarse con la EstanciaSantaCatalina (3), que fueadquirida en 1622. Tras la canalización del agua por conductos subterráneosde piedra, dos tajamares que hacían funcionar dos molinos, construyeron la

fantástica iglesiadeestilobarrocoalemánencuyo interiorse destaca el retablo de madera de cedro paraguayo dorado ala hoja.

Recomendación: Comenzar temprano, para no pasar por altoningún detalle de estos fascinantes lugares.

Along the north road 9,50 km from the local capital city, you will get to Estancia JesusMaria(1)where the Jesuits settled from 1618 when the priest Oñate bought the property and 20,000grapevines. They dedicated exclusively to the plantation of fruit trees and in 1740 they built thehouse and a big wine cellar.

From there and just 5 minutes drive, the Estancia de Caroya (2)which was built in 1616 withthe aim that its fruits kept the possessions of the city of Cordoba. It was a lodging house for thestudents, from there its functional and architectural conception around a rectangular patio,galleries that lead to the rooms, the chapel being one of them.

Then along the road to Ascochinga (8 km) you need to turn left, drive 12 km along an earthroad to reach Estancia Santa Catalina (3), which was acquired in 1622. After the water couldbe carried through underground channels of stone, two dams which made two windmills work,they built the fantastic church in the German Gothic style in whose interior a Paraguayan cedaraltarpiece in gold leaf outstands.

La receta del salame típico de Colonia Caroya se estableció a travésde acuerdos entre los elaboradores, teniendo en cuenta la tradición caroyense:carne vacuna, carne decerdo, tocinoy condimentos, picadogrueso, embutidoen tripa natural vacuna, madurado en sótanos durante un período mínimo de21 días y ajustado a estrictos controles de calidad.El salame típico de Colonia Caroya obtuvo recientemente la primeraIndicación Geográfica (I.G.) para productos alimenticios deArgentina, un sello de calidad oficial que otorga el Ministerio deAgricultura, Ganadería y Pesca de la Nación que diferencia a losproductos únicos, cuyo perfil particular se debe a la influenciade su territorio de origen. En este caso, la I.G. significa elreconocimiento de un salame único, cuyo aspecto y sabor sedeben a los saberes de los elaboradores caroyenses.Esta Indicación Geográfica la podrán llevar solamente los salameselaborados en Colonia Caroya, cuyas características y formas deelaboración correspondan a lo que los caroyenses han definidocomo su producto típico.Definir insumos, prácticas de elaboración, estacionamiento en sótano ylas características que diferencian al salame típico de Colonia Caroya,fue un trabajo iniciado en 2008 por un grupo de elaboradorescaroyenses, acompañados por el Municipio local y por Institucionesde Investigación y Desarrollo como el INTA, INTI, Universidad deQuilmes, Universidad de Cuyo, Ministerio de Agricultura Ganaderíay Pesca de la Nación y organismos internacionales como la FAO yel Instituto Latinoamericano de Desarrollo Rural.

La I.G. permitirá:• Valorizar la cultura caroyense;• Garantizar la autenticidad ycalidad del salame típico;• Proteger el uso de la denominación ColoniaCaroya para salames no elaborados en lalocalidad.

The most traditional and representative cold cut of Colonia Caroya isthe salami. The recipe of the typical salami from colonia caroya was madethrough agreements among the makers, taking into account the localtradition: beef, pig meat, bacon, and spices, thick minced meat, stuffed withnatural cattle intestine, left in basements during a minimum period of 21 days

and under strict quality controls.

The typical salami from Colonia Caroya has recently obtained the first GeographicalIndication (G.I.) for food products in Argentina, a seal of official quality granted by theMinistry of Agriculture, Stockbreeding and Fishing of the Nation and it marks adifference with unique products, whose particular profile is due to the influence ofits place of origin .In this case,the Geographical Indication(G.I.A)means theacknowledgement of a unique salami whose aspect and flavor are due to theknowledge of the manufacturers from Colonia Caroya.

This Geographical Indication could only apply to the salamis made in Colonia Caroya,whose characteristics and shapes of elaboration correspond with what the localpeople call their typical product.

Defining supplies, elaboration methods, their placement in basements for a period oftime and the characteristics that differenciate the typical salami from Colonia Caroya,was a work initiated in2008by a groupof local manufacturers togetherwith the localTown Hall and by Research and Development Institutions like INTA, INTI, University ofQuilmes, University of Cuyo, Ministry of Agriculture, Stockbreeding and Fishing ofthe Nation and international organisms like FAO and the Latin American Institutionof Rural Development.

The G.I will allow :• To value the local culture;• To guarantee the authenticity and quality of the typical salami;• To protect the use of the denomination Colonia Caroya for salamis notmanufactured in the town.
