TYPICAL SPANISH DESSERT AT EASTER
HISTORIA DE LA TORRIJA
Ya Juan del Encina en el s. XV, hablaba de las Torrejas.
En el siglo XIX y en al comienzo del XX, se servían torrijas con un vaso de vino tinto en las tabernas.
Son típicas de Cuaresma y Semana Santa en toda España y también en México.
Juan del Encina in the 15th century talked about the French toast. In the 19th and early 20th century, they were served with a glass of red wine in the taverns.
This sweet is typical of Lent, Holy Week and Easter in Spain and in Mexico.
Su consumo se extendió debido al bajo precio del pan y a la prohibición , por parte de la Iglesia Católica, de comer carne durante los viernes de Cuaresma. La torrija se parece a un trozo de carne.
Its use was extended due to the low cost of bread, and the prohibition by the Catholic Church, of eating meat on Fridays during Lent. The French toast are like a piece of meat.
Preparación -Cortar la barra de pan (mejor si es de un día o dos
antes) en rebanadas de unos 2cm de grosor. -Se cuece leche con azúcar, canela y una corteza de
limón. -Se vierte la leche caliente sobre las rebanadas de
pan. -Después se rebozan en huevo batido y se fríen en
aceite de oliva, dando la vuelta por ambos lados. -Una vez fritas se introducen en un jarabe
previamente preparado con agua, azúcar, vino dulce, y una cucharada de miel.
□ Se puede cambiar la leche caliente por vino.□ También se pueden espolvorear con azúcar y canela.□ O, mejor aún, una vez frías, bañarlas en leche con
azúcar y canela.
Preparation -Cut the loaf of bread ( ideally a day or two before) in
slices about 2cm thick. -Boil milk with sugar,cinnamon and lemon peel. -Pour the hot milk over the slices of bread and dip
them in egg batter and fry them in olive oil, turning on both sides.
-Once fried, introduce them in a syrup, previously prepared with water,sugar, a spoonful of honey, and boiled together.
□ You can chage the hot milk for wine.□ They can be sprinkled with sugar.□ Or even better, once very cold, pour cold milk with
sugar and cinnamon over.
